Ice cream--the perfect summer dessert. Cold and refreshing after a long, hot, muggy day--it can't be beat. And my all time favorite ice cream? That would be the Raspberry Chocolate Chip ice cream my husband has been making for us. Delicious!
Last night, as we had finished yet another batch of ice cream (the ice cream does seem to disappear rapidly around here) my husband kindly agreed to make some more. (I really love that husband of mine!)
And Pookie was such a great helper. She helped Daddy by testing several of the raspberries to make sure they were tasty, testing the sugar to make sure it was sweet, and testing way too much bittersweet chocolate to make sure...it was chocolatey enough? And she thoroughly enjoyed herself, can you tell?
And she likes the finished product just as much as she likes all the ingredients. That would be Pookie's little hand you see there stealing some ice cream. She just couldn't wait until I was done taking pictures--she had to have some then and there!
So if you have an ice cream maker and are looking for a delicious recipe to try...well then you'll need (oh and please note this does make a lot, but you'll eat all of it, I promise!):
4 cups heavy whipping cream
2 cups half and half
1 and 1/2 cups sugar
4 cups raspberries (you can use frozen or fresh, just be sure to mash them up a bit)
8 oz bittersweet chocolate (we use a grater in order to get fine chocolate bits)
4 tsp vanilla
Mix all ingredients together and...follow the instructions for your ice cream maker. Enjoy!
